My goal last week was to eat colorfully. I was living off of arugula tossed with cherry tomatoes and burrata--seasoned with olive oil, white balsamic vinegar, and salt and pepper--so simple and so delicious! I've also jumped on the bandwagon with juicing. The above consists of kale + green apples + ginger + an orange. I'm consuming colorfully and loving it!

sounds like wonderful meals.
ReplyDeleteEating colourfully has got to be a winner for good health - a little bit of everything (i.e. not all beige/brown food - eurgh!). What does the kale taste like in this juice? Is it ok or a bit earthy?!
ReplyDeletelove this goal, jennifer! and beautiful beautiful photos (as usual).
ReplyDeleteSomehow when I eat bright colors I feel immediately better and so energized.
ReplyDeleteOhhh that sounds so good! I'm going to have to try that juice combination out, yum!
ReplyDeleteThis is similar to the first juice I made. I'm not gonna lie…I couldn't finish it. Haha, just too much flavor for me. But, bc I knew I needed to use veggies during my cleanse I made broccoli, green apple, and flat parsley. It's delicious!! Keep juicing! :)
ReplyDeletei could drink fresh green juice everyday (and in the summer do). Love juicing this time of year!
